    About 40% of food bought by Australian venues is wasted (RMIT Watch My Waste), and spoilage can account for 21% of hospitality food waste (Love Food Hate Waste NSW): 40% × 21% = 8.4% of purchases. A$24,000 × 8.4% = A$2,016.

    The bar free-pours without a jigger. Every 30ml nip goes out at 45ml. The guest pays for 30ml.
